Chestnut flour gives these cookies a richness and a natural sweetness, they go well with chocolate and are wheat free.
This is a really nice and easy “introduction to chestnut flour” recipe.
Just a few ingredients and mix it up like any other chocolate chip cookie, but with less added sugar, a good source of potassium and a source of fibre.

Compared to other nut flours, chestnut flour is lower in fat, but higher in carbohydrates. Lower in carbohydrates than wheat flour though.
They are gluten free, but not keto due to the higher carb content. It is also more expensive than wheat flour, as most nut flours are.
You could make your own chestnut flour if you have too many roasted chestnuts but I would suggest just buying it because it is not worth the trouble especially because it probably wouldn’t be cost efficient and the flour may be inconsistent. Some may have more moisture than others.

Not a lot of sugar is used in this recipe, or much of anything else really, so I would file this under the slightly healthier cookies, especially if you omit the chocolate chips. How to Make Wheat Free Chestnut flour Cookies

A little idea here if you are making this because you are watching your sugar intake, but you still want to add chocolate. Instead of using regular chocolate chips, use half the amount of mini chips. It kind of spreads less, around more.
- 2 cups (200g) chestnut flour
- ¼ cup (50g) sugar
- ½ cup (115g) unsalted butter, room temperature, or coconut oil, the solid at room temperature kind
- 1 large egg
- ½ tsp pure vanilla extract
- ½ tsp baking soda
- ½ cup (150g) chocolate chips, or ¼ cup (75g) mini chocolate chips
- ¼ tsp salt
1. Preheat oven to 350°F (180°C).
2. Combine chestnut flour, baking soda and salt, in a medium mixing bowl. Set aside.
3. In another medium sized mixing bowl, cream together butter or oil and sugar until well blended.
4. Add the egg and incorporate well. Scrape the bowl often.
5. Add the vanilla.
6. Stir in the dry ingredients.
7. Then the chocolate chips.
8. Using a scoop or two spoons, drop tablespoon sized cookie dough on a greased or lined cookie sheet.
9. Flatten slightly. They will not spread too much.
10. Bake on middle rack for about 12 minutes.
