This is SO easy and SO good.
If you forgot you were supposed to take office snacks or bake for a party and you had 10 minutes, you could actually do this.
This is where you don’t need to make any apologies for using a microwave to prepare something. It is the best thing to use here.
You can use a pot on the stove, but wait until it is cool enough before stirring in the marshmallows.
If you use the microwave, it will take about 30 seconds to heat.
I like soy nut butter and peanut butter, I like chocolate, I kind of like marshmallows, but all together, I don’t know if I should admit that this is a bit addictive.
I like the texture of these bars as is, but sometimes I add rice crisp cereal to lighten it up.
The rice crisps give it another texture layer.
Each time you make it you can see if you get faster.

How to Make Chocolate Marshmallow Soy nut or Peanut butter Bars
INGREDIENTS

Makes 1- 9” (23cm) square cut in 25 pieces (5×5)
Prep time: 7 minutes
Refrigeration time: 1 hour
- 8 oz (225g) semi sweet chocolate chips, about 1⅓ cups, depending on if you use regular or mini chips
- 7 oz (200g) soy or peanut butter, 1 scant cup. Err on the side of less or your bars will be too melty.
- 1 Tbsp butter
- A good 2 cups of mini marshmallows 4 oz (120g)
- 1 cup rice crisp cereal 1 oz (15g) -optional. I used brown rice crisp cereal, because I always try!
Line a 9” (23cm) square baking pan.
1. Put the chocolate chips, peanut or soynut butter and butter in a large microwave bowl. Microwave for 30 seconds
2. Let sit a few minutes before stirring. It will probably be all the heat you need.
3. Stir until smooth.
4. Fold in marshmallows. Also the rice crisps if using.
5. Spread into the prepared pan.
6. Refrigerate for at least an hour before cutting.
