These oatmeal hemp bars taste really great and have a soft chewy texture.

I use organic butter flavoured coconut oil, but I have used butter, or solid at room temperature coconut oil. I often use half butter and half coconut oil.

If you substitute the honey with other sugars they will be more crisp.

I try to use organic and raw whenever possible, but in the case of the honey for this recipe, it is going to get cooked, so don’t bother with an expensive,  good raw honey, unless it’s all you have.

I wouldn’t recommend decreasing either too much as I already have as much as I could. The oil and sugar are needed to hold it together well.

Make sure it bubbles a bit when it is baking, that way you know the sugar has melted and will bind the dry ingredients together.

Line your baking pan with parchment and let cool before lifting these out and cutting.

You can wrap the outside of your pan with the parchment to shape it, as if you were wrapping a gift, then fit it inside.

How to Make Oatmeal Hemp Bars

INGREDIENTS

Makes about 24 pieces

Prep Time – 15 min

Cook Time – 25 min

  • ½ cup or 1 stick (110g) unsalted butter, or solid coconut oil
  • ¼ cup (80g) liquid honey
  • 2 ½ cups (250g) rolled oats, not instant
  • ¾ cup (120g) hemp hearts
  • ½ cup (104g) sugar, I used organic cane
  • ¼ tsp salt

1. Preheat oven to 350°F (176°C)

2. Line a 9”x13” (23x33cm) baking pan with parchment paper.

3. Slightly melt butter or oil in a pot, or medium bowl in a microwave, lightly covered in case it sputters, Amy.

 It only needs to be mostly melted, it will continue to melt as you stir it.

4. Remove from heat and stir in honey.

5. In a separate bowl, combine oats, hemp, sugar and salt. 

6. Combine with the butter and honey.

7. Mix well and then press into the pan using a rubber scraper or the back of a large spoon.

8. Bake at 350°F (176°C) for 20-25 mins

9. Cool 15 minutes before removing from pan.  

10. Cut into bars.

You could also use a 9” (23cm) square pan but add about 3 more minutes baking time.

  • ½ cup or 1 stick (110g) unsalted butter, or solid coconut oil, or half of each
  • ¼ cup (80g) liquid honey
  • 2½ cups (250g) rolled oats, not instant
  • ¾ cup (120g) hemp hearts
  • ½ cup (104g) sugar, I used organic cane
  • ¼ tsp salt

INSTRUCTIONS

  1. Oven 350°F (176°C)
  2. Line a 9”x13” (23x32cm) baking pan with parchment paper.
  3. Slightly melt butter or oil in a pot, or carefully microwave, loosely covered in a medium bowl.
  4. Remove from heat and stir in honey.
  5. In a separate bowl, combine oats, hemp sugar and salt.
  6. Combine with the butter and honey.
  7. Mix very well and press firmly into the pan using a rubber scraper or the back of a large spoon.
  8. Bake at 350°F (176°C) for 20-25 mins
  9. Cool 15 mins before removing from pan.  
  10. Cut into bars.
