When does streusel not make something better?

I have made these without the streusel though and used a scant cup of raisins.  

I have also used both.

How to Make Oatmeal Streusel Muffins

INGREDIENTS

Makes about 16 muffins

Prep Time – 25 minutes

Oat Soaking Time – 30 minutes

Cook Time – 18 minutes

  • 1 cup (90g) rolled oats
  • 1¼ cup (312mL) buttermilk, or 1½  tsp vinegar and enough milk to equal 1¼ cup (312mL)
  • ½ cup (70g) whole wheat flour
  • 1½ cup (204g) all purpose flour
  • ½ tsp salt
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ⅔ cup (165mL) oil, I use avocado
  • ⅔ cup (140g) packed brown sugar
  • 2 large eggs
  • 1½ tsp vanilla
  • 1 cup (170g) raisins or streusel topping – recipe follows

1. Preheat oven to 375°F (190°C)

2. Soak the oats in the buttermilk for 30 minutes.

3. Combine the flours, salt, baking powder and baking soda. Add raisins -if using, into oat mixture.

4. Mix together the oil, and sugar. 

5. Beat in the eggs, one at a time and add the vanilla.

6. Pour in the oats and buttermilk.

7. Stir in dry ingredients, just until moist.

8. Fill muffin cups almost half way.

9. Sprinkle with half of the streusel.

10. Top with the rest of the muffin batter, then more streusel.

11. Bake for 16 – 18 minutes

Streusel mixture

INGREDIENTS

Prep time – 10 minutes

  • ¼ cup (50g) cane sugar
  • ⅓ cup (76g) butter, cold, cut in pieces to make it easier to add.  At least 9 pieces.
  • ¼ cup (34g) flour
  • ⅓ cup (30g) rolled oats
  • 1 tsp cinnamon
  • ⅛ tsp salt, if using unsalted butter
  1. Combine the sugar, flour, oats and cinnamon.
  2. Cut in the cold butter with a pastry cutter, or two knives.  A food processor works great, but just until crumbly.

  • ¼ cup (34g) flour
  • ⅓ cup (30g) rolled oats
  • 1 tsp cinnamon
  • ⅛ tsp salt, if using unsalted butter

INSTRUCTIONS

  1. Combine the sugar, flour, oats and cinnamon.
  2. Add the butter.
  3. Combine with a pastry cutter or fork.  You could also use a food processor, just until crumbly.
